They articulate 3000 miles or 3 months but it should be fine for at least 6 months because once the grease starts getting used it breaks down faster
The coolant can be tested with a coolant tester. specifically pretty much and eye dropper that has little ball read the directions and they will tell you how appropriate it is, the tester is only a couple of bucks.

The anti-freeze should be checked every year to make sure it is still sufficient for the weather contained by your area. Most of the current formulas for anti-freeze are perfect for several years under regular driving conditions. My pock-up still has the anti-freeze that be in it when I bought (used) it surrounded by the summer of 2000. AS for the rest of the fluids, just top them sour as needed until you get the recommended miles on them in the past you change them. However, if it is an automatic, you might want to enjoy the transmission serviced every 3 or 4 years, if the mileage is not met.
