The price on the sign is the amount of money per gallon of gasoline you own to pay.

So 1 gallon of gas might cost $2.959. If your car's tank requests 15 gallons to be filled, you'll pay $44.89 for 15 gallons of gas.
Different auto manufacturer require different grades of gasoline, so there are three common grades. If you hold a car that only requires the lowest order, you'll get more gasoline for the $20 you're spending than the owner of a Lotus Elan will.

If you run a lower octane than is required, you run the risk of voiding your warranty, destroying your engine, and having to frontage the cost of engine replacement. The difference in price per gallon is cheap insurance against that.

Diesel engines require diesel fuel, which is a different product than gasoline. It competes, more so than gasoline, in several different market, hence a higher price more often than not. Diesel engines aren't cheap.

So you buy what you necessitate, you buy what's required. Or you get to rent a car or amble for a few days, while you're having your engine replaced.
